- 1 cup raspberries
- 1/4 cup maple syrup
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1 tbsp cold water
- 85 grams cream cheese (softened)
- 42.5 grams unsalted butter (softened)
- 125 grams powdered sugar
- 1/4 tsp vanilla extract
- 1/4 cup white chocolate
- 1/4 cup sprinkles
Instructions
- Prepare raspberry filling: Cook raspberries with maple syrup, lemon juice, cornstarch, and water in a saucepan over medium heat until thickened (5–7 minutes). Cool.
- Make macaron batter: Sift almond flour and powdered sugar together. Whip egg whites until frothy; gradually add sugar until stiff peaks form. Fold in food coloring and sifted dry ingredients until combined.
- Pipe macaron shells: Transfer batter to piping bags and pipe onto lined baking sheets, leaving space between each.
- Bake: Preheat oven to 300°F (150°C) and let piped macarons rest for 30 minutes before baking for 15–20 minutes. Cool completely.
- Assemble: Pair macaron shells, spread cream cheese frosting on one half, add raspberry filling, and sandwich with another shell.
