Ingredients
- 1 cup fresh or frozen raspberries
- 1/4 cup sugar
- 1 teaspoon lemon juice
- 1/4 cup water
- 16 ounces mascarpone cheese (at room temperature)
- 1 teaspoon pure vanilla extract
- 1 teaspoon freshly grated lemon zest (preferably Meyer lemons)
- 1 cup whipping cream
- 1/4 cup sugar
- 2 packages lady fingers
- 1 cup lemon curd
- About 2 pints of raspberries for garnish
Instructions
- Prepare raspberry puree by simmering raspberries with sugar, lemon juice, and water until smooth. Cool slightly.
- Make the mascarpone filling by whipping cream with sugar until soft peaks form. Fold in mascarpone, vanilla extract, and lemon zest.
- Layer half of the ladyfingers in an 8×8 inch dish; pour half of the raspberry puree over them. Spread half of the mascarpone filling and half of the lemon curd on top.
- Repeat layering with remaining ingredients. Chill for at least 3 hours before serving.
