  • 1/2 cup unsalted butter
  • 12 oz. Nestlé Tollhouse premiere vanilla chips (divided)
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1 tsp almond extract
  • 1 cup unbleached all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup seedless raspberry jam or red raspberry preserves
  • 1/4 cup sliced almonds

Instructions

  1. Melt unsalted butter in a saucepan and let cool for 5-7 minutes.
  2. Stir in half of the vanilla chips into the cooled butter.
  3. In a bowl, beat eggs until foamy; add sugar and almond extract, then mix well.
  4. Combine the butter mixture with the egg mixture; stir gently.
  5. Mix flour and salt together; gradually add to the wet ingredients until just combined.
  6. Spread half of the batter into a greased 9-inch square baking pan and bake at 325°F for 15-20 minutes until golden brown.
  7. Melt raspberry jam over low heat and spread it over the warm crust.
  8. Stir remaining vanilla chips into the leftover batter; dollop over jam and sprinkle with sliced almonds.
  9. Bake again for 30-35 minutes or until a toothpick comes out clean.
  10. Cool on a wire rack before cutting into bars.
