  • 160g granulated sugar
  • ½ cup (123g) egg whites (for buttercream)
  • 1 cup (200g) granulated sugar (for buttercream)
  • 455g unsalted butter (cold)
  • 1 tsp vanilla bean paste (for both macaron shells and buttercream)
  • Gel food color

Instructions

  1. Prepare: Gather all ingredients; ensure egg whites are at room temperature.
  2. Make Shells: Sift ground almonds and powdered sugar; whip egg whites until foamy, gradually adding sugar until stiff peaks form; fold in almond mixture.
  3. Color & Pipe: Divide batter for colors, mix gel food color, pipe onto lined baking sheets.
  4. Rest & Bake: Let macarons rest until a skin forms; bake at 150°C (300°F) for 15-18 minutes.
