  • 1 ½ pounds boneless chicken thighs
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter
  • 6 garlic cloves
  • 1 medium onion
  • 1 can (15 ounces) tomato sauce
  • 2 cups heavy cream
  • Spices: salt, garlic powder, sweet paprika, curry powder, black pepper, cayenne pepper, garam masala

Instructions

  1. In a mixing bowl, season chicken chunks with salt, garlic powder, sweet paprika, and curry powder.
  2. Heat oil and 2 tablespoons of butter in a large skillet over medium heat. Add chicken and cook until browned (8-10 minutes). Remove and set aside.
  3. In the same skillet, add remaining butter, minced garlic, and diced onion. Sauté until translucent (about 5 minutes).
  4. Stir in tomato sauce, sugar, salt, black pepper, heavy cream, cayenne pepper (if using), garam masala, and additional curry powder. Simmer for 10-15 minutes until thickened.
  5. Return chicken to skillet; stir to coat in sauce and cook on low for another 5 minutes.
  6. Serve hot with freshly chopped parsley alongside naan bread and steamed rice.
