- 6 slices bacon (diced)

- 2 lb yellow flesh potatoes (sliced thin)
- 1 cup heavy cream
- 2 tsp all-purpose flour
- 1 ½ tsp kosher salt
- ⅛ tsp black pepper
- 1 ½ cups shredded cheddar cheese
- 1 egg (beaten)
Instructions
- Prepare the crust by mixing flour and salt in a food processor. Add cold butter and pulse until crumbly. Gradually add ice water until dough forms; refrigerate for at least 30 minutes.
- Cook diced bacon in a frying pan over medium heat until crispy, then sauté onions in residual fat.
- In a bowl, combine sliced potatoes, heavy cream, flour, seasonings, cooked bacon, sautéed onions, and cheddar cheese.
- Preheat oven to 375°F (190°C). Roll out half of the chilled dough into a baking dish; fill with potato mixture. Cover with remaining rolled dough.
- Brush with beaten egg, cut slits for steam, and bake for about 61 minutes until golden brown.
