  • 2 ½ cups all-purpose flour
  • 1 tsp kosher salt
  • 1 cup cold butter (diced)
  • ½ cup ice water
  • 6 slices bacon (diced)
  • 1 large onion (diced)
  • 2 lb yellow flesh potatoes (sliced thin)
  • 1 cup heavy cream
  • 2 tsp all-purpose flour
  • 1 ½ tsp kosher salt
  • ⅛ tsp black pepper
  • 1 ½ cups shredded cheddar cheese
  • 1 egg (beaten)

Instructions

  1. Prepare the crust by mixing flour and salt in a food processor. Add cold butter and pulse until crumbly. Gradually add ice water until dough forms; refrigerate for at least 30 minutes.
  2. Cook diced bacon in a frying pan over medium heat until crispy, then sauté onions in residual fat.
  3. In a bowl, combine sliced potatoes, heavy cream, flour, seasonings, cooked bacon, sautéed onions, and cheddar cheese.
  4. Preheat oven to 375°F (190°C). Roll out half of the chilled dough into a baking dish; fill with potato mixture. Cover with remaining rolled dough.
  5. Brush with beaten egg, cut slits for steam, and bake for about 61 minutes until golden brown.
