Ingredients
- 3–4 lbs beef chuck roast
- 4 medium carrots, chopped
- 2 lbs Yukon Gold or red potatoes, quartered
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 cup low-sodium beef broth
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Set your Instant Pot to ‘Sauté’ mode and add oil. Season the chuck roast with salt and pepper, then sear it for 3-4 minutes on each side until browned. Remove from pot.
