  • 34 lbs beef chuck roast
  • 4 medium carrots, chopped
  • 2 lbs Yukon Gold or red potatoes, quartered
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Set your Instant Pot to ‘Sauté’ mode and add oil. Season the chuck roast with salt and pepper, then sear it for 3-4 minutes on each side until browned. Remove from pot.
  2. Add onions, carrots, and potatoes to the pot; sauté for about 5 minutes until softened.
  3. Stir in garlic and thyme; cook for another minute until fragrant.
  4. Pour in beef broth to deglaze the pot, scraping up any browned bits.
  5. Return the seared roast back into the pot on top of the vegetables.
  6. Secure the lid and pressure cook on high for 60 minutes. Allow natural pressure release for 15 minutes before venting any remaining steam.
