- ½ cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoons vanilla extract
- 2 ½ cups + 2 tbsp all-purpose flour
- ½ teaspoon fine sea salt
- ½ tsp baking soda
- 2/3 cup strawberry preserves
- 1 cup powdered sugar
- 1 ½–2 tbsp whole milk
- Rainbow sprinkles
Instructions
- Preheat the oven to 375°F (190°C). Line an 8×8 baking pan with parchment paper.
- In a stand mixer, cream together butter and granulated sugar until fluffy. Add eggs and vanilla; mix until combined.
- Gradually incorporate flour, salt, and baking soda until a dough forms. Chill for 20 minutes.
- Press half of the dough into the prepared pan; freeze briefly. Then layer with strawberry preserves and top with remaining dough.
- Bake for 25–28 minutes until golden brown. Cool completely on a wire rack.
- Prepare icing by whisking powdered sugar, milk, and vanilla until smooth; drizzle over cooled bars and sprinkle with rainbow sprinkles.
