Ingredients
- 150 g pistachio cream spread
- 180 g all-purpose flour
- 1 tablespoon cornstarch
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 115 g unsalted butter (melted)
- 100 g brown sugar
- 50 g granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 100 g semi-sweet or dark chocolate (chopped)
- 50 g unsalted pistachios (chopped)
Instructions
- Freeze the pistachio cream spread on a lined plate for at least 1 hour until solid.
- In one bowl, mix flour, cornstarch, baking powder, baking soda, and salt.
- In another bowl, whisk together melted butter, brown sugar, granulated sugar, egg, and vanilla extract until smooth.
- Combine the dry ingredients with the wet ingredients until just mixed. Fold in chopped chocolate and pistachios.
- Scoop the dough into balls and chill for about an hour.
- Preheat oven to 350°F (175°C). Stuff each dough ball with frozen pistachio cream before placing them on a baking sheet.
- Bake for 11-12 minutes or until edges are set; sprinkle with flaky salt after removing from the oven.
