  • 150 g pistachio cream spread
  • 180 g all-purpose flour
  • 1 tablespoon cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 115 g unsalted butter (melted)
  • 100 g brown sugar
  • 50 g granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 100 g semi-sweet or dark chocolate (chopped)
  • 50 g unsalted pistachios (chopped)

Instructions

  1. Freeze the pistachio cream spread on a lined plate for at least 1 hour until solid.
  2. In one bowl, mix flour, cornstarch, baking powder, baking soda, and salt.
  3. In another bowl, whisk together melted butter, brown sugar, granulated sugar, egg, and vanilla extract until smooth.
  4. Combine the dry ingredients with the wet ingredients until just mixed. Fold in chopped chocolate and pistachios.
  5. Scoop the dough into balls and chill for about an hour.
  6. Preheat oven to 350°F (175°C). Stuff each dough ball with frozen pistachio cream before placing them on a baking sheet.
  7. Bake for 11-12 minutes or until edges are set; sprinkle with flaky salt after removing from the oven.
