Ingredients
- 1/4 cup shredded coconut
- 1 large fresh pineapple
- 4 kiwis
- 8–10 fresh mint leaves
- 2 limes
- 2 tablespoons honey
Instructions
- Toast the coconut in a skillet over medium-low heat for 3-5 minutes until golden brown, stirring frequently. Set aside.
- Cube the pineapple and add it to a large mixing bowl. Halve the kiwis, scoop out the flesh with a spoon, slice into bite-sized pieces, and add to the bowl. Thinly slice the mint leaves and mix them in.
- In a separate bowl, zest and juice the limes, whisk in honey, then pour over the fruit mixture and toss gently to coat. Cover and refrigerate until ready to serve.
- Just before serving, sprinkle toasted coconut over the top for added crunch.
