  • 2 cups crushed pineapple with juice
  • 1 tsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter (room temperature)
  • 4 oz cream cheese (room temperature)
  • 2 cups confectioner’s sugar
  • 1 tsp heavy whipping cream
  • 1 tsp vanilla extract
  • 1/8 tsp coconut extract
  • 1 cup sweetened coconut flakes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together butter, oil, and sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  3. Gradually mix in cake flour, baking powder, salt, sour cream, vanilla extract, and coconut extract until combined.
  4. Grease two 9-inch round cake pans and divide the batter evenly. Bake for about 42 minutes or until a toothpick comes out clean.
  5. For the pineapple filling, melt butter in a saucepan then whisk in cornstarch and sugar. Add crushed pineapple and cook until thickened. Stir in lemon juice and vanilla.
  6. For the frosting, beat butter and cream cheese together before adding confectioner's sugar and extracts until smooth.
