  • 360 grams (1 1/2 cups) warm water
  • 3 grams (1 teaspoon) active dry yeast
  • 10 grams (just shy of 1 1/2 teaspoons) honey
  • Fresh mozzarella cheese
  • Pepperoni slices
  • Whole milk ricotta cheese
  • Castelvetrano olives
  • Hot honey
  • Fresh basil leaves

Instructions

  1. In a stand mixer bowl, whisk together flour and salt.
  2. Combine warm water, yeast, and honey; let sit until foamy.
  3. Mix yeast mixture into flour; knead until dough pulls away from sides.
  4. Knead by hand for a few minutes and let rise covered for about 90 minutes.
  5. Divide into balls; refrigerate for at least one day.
  6. Prepare sauce by sautéing garlic, adding tomato paste and crushed tomatoes, herbs, and spices; simmer for 20 minutes.
  7. Preheat oven to highest setting or outdoor pizza oven at 750°F -800°F.
  8. Roll out dough, spread sauce, top with mozzarella, pepperoni, olives, and ricotta.
