- 1/4 teaspoon salt
- 1/2 cup butter (room temperature)
- 2/3 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- red food coloring
- royal blue food coloring
Instructions
- In a medium bowl, whisk together the flour, baking powder, and salt until combined.
- In a large mixing bowl, cream together the butter and sugar using an electric mixer on medium speed until light and fluffy (about 3 minutes).
- Add the large egg one at a time, beating well after each addition. Mix in the vanilla extract until fully incorporated.
- Gradually add the dry mixture into the wet ingredients. Mix until just combined; do not overmix.
- Remove the dough from the bowl and divide it into three equal sections.
- Shape one section into a rectangle (approximately 4×2 inches), wrap it securely in wax paper, and refrigerate. This will be your white layer.
- Color one portion red using food coloring until fully mixed. Repeat with royal blue for the other dough section.
- Place each colored dough between wax paper. Roll each to about 1/8-inch thick. Refrigerate all rolled dough for about 30 minutes.
- Peel off one side of wax paper from each dough color. Place white on top of red, then blue on top of white. Lightly roll together to adhere layers.
- Starting from one end, tightly roll up the layered dough into a log shape. Wrap in wax paper again, standing it upright in a glass to maintain shape while chilling in the fridge for at least four hours or freeze for thirty minutes.
- When you’re ready to bake, preheat your oven to 350ºF (175ºC) while lining two baking sheets with parchment paper.
- Remove chilled dough from wrapping and slice into rounds about 1/4-inch thick. Arrange on prepared baking sheets with about two inches between them since they will expand while baking.
- Bake in preheated oven for approximately 9 to 11 minutes or until pale golden brown. Let cool on tray for about three to four minutes before transferring to a wire rack to cool completely.
