Description

Parmesan Chicken Meatloaf is a delightful fusion of classic comfort food and Italian flavors. This dish features ground chicken mixed with rich Parmesan cheese and gooey mozzarella, all topped with zesty marinara sauce and a crunchy breadcrumb crust.   • 30 g grated Parmesan cheese
  • 3 mozzarella cheese strings (cut into 1 cm slices)
  • 120 ml marinara sauce
  • 60 g seasoned breadcrumbs
  • 1 egg
  • Fresh parsley
  • Garlic
  • Onion
  • 2 tablespoons olive oil
  • 2 garlic cloves (minced)
  • 80 g onion (finely diced)
  • 2 teaspoons milk
  • 2 tablespoons fresh parsley (chopped)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • 120 ml marinara sauce
  • 2 tablespoons panko breadcrumbs
  • 20 g Parmesan cheese (grated)
  • 1 tablespoon butter (melted)
  • 120 g mozzarella cheese (shredded)

Instructions

  1. Preheat oven to 200°C (400°F). Line a baking sheet with foil and spray with cooking spray.
  2. In a frying pan, heat olive oil over medium heat and sauté finely diced onion and minced garlic until softened; let cool.
  3. In a mixing bowl, combine ground chicken, cooled onion mixture, breadcrumbs, milk, grated Parmesan, egg, chopped parsley, Italian seasoning, and salt. Mix until just combined.
  4. Shape two-thirds of the mixture into a rectangle on the baking sheet; place mozzarella slices in the center. Top with remaining mixture to seal.
  5. Spread marinara sauce over the top and bake for 45 minutes.
  6. Mix panko breadcrumbs with melted butter and parsley; sprinkle on top along with shredded mozzarella.
  7. Return to oven for an additional 15-20 minutes until golden brown and cooked through (internal temperature should reach 74°C or 165°F).
  8. Let rest for 10 minutes before slicing.
