  • 4 skinless salmon fillets
  • 1 cup dry orzo pasta
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • Juice of ½ lemon
  • ½ cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp salt (divided)
  • 1 tsp coarsely ground black pepper (divided)
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • Freshly ground black pepper (for serving)
  • Chili flakes (for serving)

Instructions

  1. Prepare all ingredients by chopping onions, mincing garlic, and seasoning the salmon.
  2. In a large nonstick skillet, heat olive oil and butter over medium-high heat. Sear the seasoned salmon for 3–4 minutes on each side until golden brown. Remove from the skillet.
  3. Lower heat to medium and sauté onion and garlic until fragrant. Stir in thyme and add the orzo, toasting for about a minute.
  4. Pour in chicken broth and bring to a boil before reducing to a simmer for approximately 8 minutes.
  5. Add spinach until wilted, then mix in lemon juice and Parmesan cheese.
  6. Return the salmon to the skillet for an additional 2–3 minutes until heated through.
  7. Serve hot with additional black pepper or chili flakes as desired.
