  • 1 lb boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 1½ cups long-grain white rice
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 2¼ cups chicken broth
  • 1 cup nacho cheese sauce
  • 1½ cups shredded cheddar or Mexican blend cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken seasoned with garlic powder, onion powder, chili powder, cumin, salt, and pepper. Sauté until mostly cooked (5–6 minutes).
  2. Stir in uncooked rice and Rotel; cook for 1–2 minutes.
  3. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 20–25 minutes until rice is tender.
  4. Remove from heat and stir in nacho cheese sauce and 1 cup of shredded cheese until melted.
