  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup long-grain rice
  • 1 ½ cups chicken broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and pepper, to taste
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, chili powder, cumin, garlic powder, and smoked paprika.
  2. Cook the seasoned chicken for 5–6 minutes until lightly browned.
  3. Add rice to the skillet and stir to coat with spices.
  4. Pour in chicken broth and bring to a simmer. Cover and cook for 15 minutes until rice absorbs most of the liquid.
  5. Stir in corn kernels and sprinkle cheese on top. Cover again and cook for an additional 5 minutes until cheese melts.
  6. Garnish with fresh cilantro before serving.
