- 1 cup long-grain rice
- 1 ½ cups chicken broth

- 1 tsp cumin
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Salt and pepper, to taste
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup shredded cheddar cheese
- 2 tbsp olive oil
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, chili powder, cumin, garlic powder, and smoked paprika.
- Cook the seasoned chicken for 5–6 minutes until lightly browned.
- Add rice to the skillet and stir to coat with spices.
- Pour in chicken broth and bring to a simmer. Cover and cook for 15 minutes until rice absorbs most of the liquid.
