- 2 cups quick oats
- 2/3 cup all-purpose flour
- 2 tbsp. cocoa powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 cup packed brown sugar
- 1/2 cup butter (melted)
- 1 large egg
- 2 tsp. vanilla
- 1 1/2 cups grated zucchini
- 1 1/2 cups semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, whisk together oats, flour, cocoa powder, baking soda, salt, cinnamon, and brown sugar.
- In another bowl, mix melted butter, egg, and vanilla until smooth.
- Combine wet ingredients with dry ingredients; add grated zucchini and 1 cup of chocolate chips. Stir until mixed.
- Drop rounded tablespoonfuls of dough onto prepared baking sheets and flatten slightly. Top with remaining chocolate chips.
- Bake for 12–15 minutes until edges are lightly browned. Let cool on the baking sheet for a few minutes before transferring to wire racks.
