Ingredients
- 2 medium zucchinis
- 1 cup chopped mushrooms (cremini or button)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 cups marinara sauce
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C). Slice zucchini lengthwise into thin strips.
- In a skillet, heat olive oil over medium heat and sauté mushrooms until golden brown (about 5 minutes). Season with salt and pepper.
- In a bowl, mix sautéed mushrooms, ricotta cheese, half of the mozzarella, Parmesan cheese, salt, pepper, and herbs.
- Take a zucchini strip, place about 2 tablespoons of filling at one end, roll tightly, and place seam-side down in a baking dish coated with marinara sauce.
- Once all rolls are assembled, cover with remaining marinara sauce and sprinkle the rest of the mozzarella on top.
- Cover with foil and bake for 20 minutes; remove foil and bake an additional 10 minutes until bubbly.
