  • 2 medium zucchinis
  • 1 cup chopped mushrooms (cremini or button)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C). Slice zucchini lengthwise into thin strips.
  2. In a skillet, heat olive oil over medium heat and sauté mushrooms until golden brown (about 5 minutes). Season with salt and pepper.
  3. In a bowl, mix sautéed mushrooms, ricotta cheese, half of the mozzarella, Parmesan cheese, salt, pepper, and herbs.
  4. Take a zucchini strip, place about 2 tablespoons of filling at one end, roll tightly, and place seam-side down in a baking dish coated with marinara sauce.
  5. Once all rolls are assembled, cover with remaining marinara sauce and sprinkle the rest of the mozzarella on top.
  6. Cover with foil and bake for 20 minutes; remove foil and bake an additional 10 minutes until bubbly.
