Ingredients
- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 pound mushrooms (cremini or button), sliced
- 2 cups fresh spinach leaves, chopped
- 3 cups marinara sauce
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Boil salted water in a pot and cook the lasagna noodles until al dente; drain and set aside.
- In a skillet over medium heat, sauté onion in olive oil until softened. Add garlic and sauté for another minute.
- Stir in mushrooms, thyme, salt, and pepper; cook until tender. Add spinach and mix until wilted.
- In the baking dish, spread marinara sauce on the bottom. Layer three noodles on top followed by half of the ricotta mixture and half of the mushroom filling. Sprinkle with one-third of mozzarella and half of Parmesan.
- Repeat layers once more, finishing with marinara sauce and remaining cheeses on top.
- Cover with foil and bake for 25 minutes; then uncover and bake for an additional 10–15 minutes until bubbly and golden.
- Allow to cool slightly before serving; garnish with fresh basil.
