  • ¾ cup diced red onion
  • ½ cup diced celery
  • 2 eggs
  • ¼ cup soy sauce (or Tamari for gluten-free)
  • ⅓ cup ketchup
  • 1 cup quick oats
  • ¼ cup light brown sugar
  • ¼ cup ketchup (for topping)
  • 3 tablespoons stone ground mustard
  • ½ teaspoon paprika
  • ½ teaspoon pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the meatloaf mix, red onion, celery, eggs, soy sauce, ketchup, and oats. Mix until just combined.
  3. Transfer the mixture to a nonstick mini loaf pan or round Pyrex dish.
  4. For the topping, mix brown sugar, ketchup, mustard, paprika, and pepper in a separate bowl. Brush over the meatloaf.
  5. Bake for 75–85 minutes or until the internal temperature reaches 160°F (70°C). Let it rest for at least 10 minutes before slicing.
