Ingredients
- 1 to 1½ pounds meatloaf mix
- ¾ cup diced red onion
- ½ cup diced celery
- 2 eggs
- ¼ cup soy sauce (or Tamari for gluten-free)
- ⅓ cup ketchup
- 1 cup quick oats
- ¼ cup light brown sugar
- ¼ cup ketchup (for topping)
- 3 tablespoons stone ground mustard
- ½ teaspoon paprika
- ½ teaspoon pepper
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the meatloaf mix, red onion, celery, eggs, soy sauce, ketchup, and oats. Mix until just combined.
- Transfer the mixture to a nonstick mini loaf pan or round Pyrex dish.
- For the topping, mix brown sugar, ketchup, mustard, paprika, and pepper in a separate bowl. Brush over the meatloaf.
- Bake for 75–85 minutes or until the internal temperature reaches 160°F (70°C). Let it rest for at least 10 minutes before slicing.
