  • Andes Mints (for ganache)
  • Heavy Whipping Cream
  • Unsalted Butter
  • Powdered Sugar
  • Peppermint Extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, whisk together dry ingredients: flour, sugars, cocoa powders, baking powder, baking soda, and salt.
  3. In another bowl, mix wet ingredients: eggs, buttermilk, vegetable oil, vanilla extract, espresso powder (if using), and hot water.
  4. Combine wet and dry mixtures until just combined. Fill each cupcake liner two-thirds full.
  5. Bake for about 20 minutes or until a toothpick comes out clean.
  6. Prepare the ganache by heating heavy cream and pouring it over chopped Andes mints; stir until smooth.
  7. Once cooled, fill cupcakes with ganache and frost with prepared mint frosting.
