Ingredients

  • 1 cup mashed strawberries
  • 2/3 cup white sugar
  • 3/4 cup water
  • 3 tbsp cornstarch
  • 1 tbsp lemon juice
  • Pinch of salt
  • 4 cups chopped strawberries
  • 2 pie crusts (store-bought or homemade)
  • 1 egg (whisked)
  • Pinch of sugar

Instructions

  1. Prepare the strawberry filling by combining mashed strawberries and water in a saucepan. Bring to a boil and simmer for 3-4 minutes. Strain the mixture to remove pulp.
  2. In another saucepan, combine sugar, cornstarch, lemon juice, and salt. Stir in the strained juice and bring to a boil until thickened. Cool slightly and mix in sliced strawberries.
  3. Preheat the oven to 375°F and spray a muffin tin with baking spray.
  4. Roll out pie crusts and cut circles. Press into muffin cavities, fill with strawberry filling, and top with remaining dough if desired.
  5. Brush with whisked egg, sprinkle with sugar, and bake for 30-35 minutes until golden brown.
  6. Cool completely before serving.
