Ingredients
- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter (room temperature)
- 1 cup granulated sugar
- 3 large eggs (beaten)
- 1/2 cup Meyer lemon juice
- 1/4 teaspoon kosher salt
Instructions
- Preheat the oven to 350°F and prepare an 8" x 8" glass baking dish with parchment paper.
- In a stand mixer, cream together the unsalted butter and powdered sugar until light and fluffy. Add in the flour and mix until combined. Press into the bottom of the prepared baking dish and bake for 15-20 minutes until lightly golden.
- While the crust is baking, whisk together granulated sugar, beaten eggs, flour, baking powder, Meyer lemon juice, and salt until smooth.
- Once the crust is ready, pour the filling over it and return to the oven for another 20-25 minutes or until a toothpick comes out clean.
- Allow to cool completely before cutting into squares and dusting with powdered sugar.
