Ingredients

  • Chuck roast
  • Dried guajillo chilies
  • Onion
  • Garlic cloves
  • Cumin seeds
  • Bay leaves
  • Beef broth
  • Lime juice

Instructions

  1. Prepare the chilies: Remove stems and seeds from guajillo chilies, then soak them in hot water for 10 minutes until softened.
  2. Blend the marinade: Combine softened chilies, garlic, cumin seeds, onion, and 1 cup of beef broth in a blender. Blend until smooth.
  3. Marinate the meat: Cut chuck roast into chunks, place in a bowl, and pour blended marinade over it. Let marinate for at least 2 hours or overnight.
  4. Cook on stovetop: In a large pot over medium heat, add marinated meat and any remaining marinade. Pour enough beef broth to cover the meat completely. Bring to boil, reduce heat to low.
  5. Simmer until tender: Add bay leaves and cover pot with lid. Simmer gently for about 3 hours until meat is fork-tender.
  6. Serve: Remove bay leaves before serving and enjoy with lime wedges on the side.
