  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese

  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • 1/4 teaspoon black pepper

Instructions

  1. In a mixing bowl, combine mozzarella cheese, feta cheese, spinach, diced tomato, red onion, and black pepper. Stir until well mixed.
  2. Lay one tortilla flat and place one-fourth of the filling mixture on half of the tortilla.
  3. Fold the tortilla over the filling to cover it completely.
  4. Heat a skillet over medium heat and add olive oil.
  5. Place the filled tortilla in the skillet. Cook for about 3-4 minutes per side until golden brown.
  6. Remove from heat, let it cool slightly, slice into wedges, and serve warm.
