Description

  • 6 cups chopped romaine lettuce
  • 1 cup chopped grape tomatoes
  • 1 large cucumber (diced)
  • 1/4 cup diced red onion
  • 1 cup cooked quinoa
  • 2 cooked chicken breasts (diced)
  • 1/2 cup pepperoncini
  • 1/3 cup feta cheese
  • 1/3 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 1/2 teaspoons dijon mustard
  • Juice from 1 lemon
  • 2 teaspoons minced garlic
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Wash and chop the romaine lettuce; place it in a large mixing bowl.
  2. Add the chopped tomatoes, cucumber, red onion, quinoa, chicken, pepperoncini, and feta cheese.
  3. In a separate bowl or dressing shaker, whisk together olive oil, red wine vinegar, Dijon mustard, lemon juice, garlic, oregano, salt, and pepper.
  4. Pour the dressing over the salad just before serving.
  5. Toss everything together until well mixed. Enjoy fresh or store in the fridge for later.
