Ingredients
- 6 cups chopped romaine lettuce
- 1 cup chopped grape tomatoes
- 1 large cucumber (diced)
- 1/4 cup diced red onion
- 1 cup cooked quinoa
- 2 cooked chicken breasts (diced)
- 1/2 cup pepperoncini
- 1/3 cup feta cheese
- 1/3 cup olive oil
- 3 tablespoons red wine vinegar
- 1 1/2 teaspoons dijon mustard
- Juice from 1 lemon
- 2 teaspoons minced garlic
- 3/4 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Wash and chop the romaine lettuce; place it in a large mixing bowl.
- Add the chopped tomatoes, cucumber, red onion, quinoa, chicken, pepperoncini, and feta cheese.
- In a separate bowl or dressing shaker, whisk together olive oil, red wine vinegar, Dijon mustard, lemon juice, garlic, oregano, salt, and pepper.
- Pour the dressing over the salad just before serving.
- Toss everything together until well mixed. Enjoy fresh or store in the fridge for later.
