Ingredients
- 1 pound chicken thighs or breasts, cut into bite-sized pieces
- 1 cup long-grain rice (basmati or jasmine)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced (red or yellow)
- 1 can (14.5 oz) diced tomatoes, drained
- 2 cups chicken broth
- Spices: oregano, paprika, cumin, salt, black pepper
- Garnish: Kalamata olives, feta cheese, fresh parsley or basil
Instructions
- Heat olive oil in a large skillet over medium-high heat. Brown the chicken pieces seasoned with salt, pepper, oregano, paprika, and cumin for about 5-7 minutes. Remove from the skillet.
- In the same skillet, add more oil and sauté onion and garlic until fragrant (3-4 minutes). Add the bell pepper; cook for an additional 2 minutes.
- Stir in rice; cook for 1 minute before adding tomatoes and chicken broth. Bring to a simmer.
- Return browned chicken to the skillet; stir and cover. Reduce heat to low and cook for 20-25 minutes until rice is tender.
- Mix in olives and feta cheese. Let sit briefly before serving with fresh herbs.
