  • 34 salmon fillets (skin removed)
  • 2 tbsp olive oil
  • 1 cup chicken stock (unsalted)
  • 1/2 cup heavy cream
  • 1/3 cup chopped sun-dried tomatoes
  • 5 garlic cloves (minced)
  • 1/2 cup freshly shredded Parmesan cheese
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 3/4 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a small bowl, mix together seasonings: dried basil, garlic powder, onion powder, thyme, red pepper flakes, salt, and black pepper.
  2. Rub half the seasoning mixture onto both sides of the salmon fillets.
  3. Heat olive oil in a large skillet over medium-high heat. Sear salmon for about 5 minutes on each side until golden brown. Remove from skillet.
  4. Add minced garlic and sun-dried tomatoes to the skillet and sauté for 1-2 minutes.
  5. Deglaze the pan with chicken stock and scrape up any brown bits.
  6. Stir in heavy cream, Parmesan cheese, and remaining seasoning mixture. Simmer for 10-15 minutes until thickened.
  7. Return salmon to the skillet and spoon sauce over it; cook an additional 3-5 minutes according to desired doneness.
  8. Serve warm, garnished with fresh basil.
