  • 2 1/4 cups graham cracker crumbs
  • 10 tbsp salted butter, melted
  • 24 ounces cream cheese
  • 1 cup sugar
  • 3 tbsp all purpose flour
  • 1/2 cup sour cream
  • 6 tbsp lime juice
  • 2 tbsp lime zest
  • 6 tbsp tequila
  • 3 large eggs
  • 2 large egg yolks
  • 3/4 cup plus 2 tbsp heavy whipping cream, cold
  • 2 tbsp tequila (optional)
  • 1/2 tbsp lime zest (optional)
  • 1/2 cup powdered sugar (optional)

Instructions

  1. Preheat your oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar; press into the bottom of a springform pan.
  2. Beat cream cheese until smooth, then gradually add sugar and flour. Mix in sour cream, lime juice, lime zest, tequila, eggs, and egg yolks until fully combined.
  3. Pour filling over crust and bake for about 1 hour and 15 minutes until set around the edges but jiggly in the center. Allow to cool gradually in the oven for an hour.
  4. Refrigerate for at least 2 hours before serving. Optional: Top with whipped cream made from cold heavy whipping cream mixed with powdered sugar and lime zest.
