- 2 1/4 cups graham cracker crumbs
- 10 tbsp salted butter, melted
- 24 ounces cream cheese
- 1 cup sugar
- 3 tbsp all purpose flour
- 1/2 cup sour cream
- 6 tbsp lime juice
- 2 tbsp lime zest
- 6 tbsp tequila
- 3 large eggs
- 2 large egg yolks
- 3/4 cup plus 2 tbsp heavy whipping cream, cold
- 2 tbsp tequila (optional)
- 1/2 tbsp lime zest (optional)
- 1/2 cup powdered sugar (optional)
Instructions
- Preheat your oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar; press into the bottom of a springform pan.
- Beat cream cheese until smooth, then gradually add sugar and flour. Mix in sour cream, lime juice, lime zest, tequila, eggs, and egg yolks until fully combined.
- Pour filling over crust and bake for about 1 hour and 15 minutes until set around the edges but jiggly in the center. Allow to cool gradually in the oven for an hour.
- Refrigerate for at least 2 hours before serving. Optional: Top with whipped cream made from cold heavy whipping cream mixed with powdered sugar and lime zest.
