Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Whisk together the flour, baking powder, and salt in one bowl.
  3. Cream together softened butter and sugar until fluffy in another bowl.
  4. Beat in eggs, vanilla extract, milk, and mango purée until mixed.
  5. Combine wet and dry ingredients without overmixing.
  6. Fill cupcake liners three-quarters full and bake for 18–20 minutes or until golden brown. Cool completely before filling with strawberry jam.
