  • 1 small red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 jalapeño pepper, minced (adjust to taste)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Select ripe mangoes that are slightly soft. Peel and dice them into cubes.
  2. Finely chop the red onion and dice the red bell pepper.
  3. Mince the jalapeño after removing the seeds (use gloves).
  4. Coarsely chop the cilantro.
  5. In a mixing bowl, combine all ingredients: mangoes, onion, bell pepper, jalapeño, and cilantro.
  6. Squeeze lime juice over the mixture and add olive oil.
  7. Season with salt and pepper to taste.
  8. Gently toss the salsa using a spatula without mashing mangoes.
  9. Cover and refrigerate for 30 minutes to meld flavors before serving.
