  • 6 egg yolks

Instructions

  3. Lower the oven temperature to 325°F (163°C). In a heat-proof bowl over simmering water, whisk together mango puree, lime zest, lime juice, vanilla extract, granulated sugar, kosher salt, and egg yolks until thickened (about 20 minutes). Stir in butter until smooth.
  4. Pour the mango curd into the cooled crust and bake for an additional 15–17 minutes until set. Let it cool at room temperature before chilling in the fridge for at least four hours.
