  • 1 cup full-fat canned coconut milk
  • 1 ½ cups water
  • 1 ¾ teaspoon salt
  • 1 cup finely diced mango

Instructions

  1. Rinse basmati rice under cool running water using a fine mesh strainer until the water runs clear. Drain well.
  2. In a medium-sized pot, combine water and coconut milk; bring to a boil.
  3. Add salt and the rinsed rice to the boiling mixture. Stir briefly.
