Ingredients

  • Icy cold water
  • Fresh raspberry puree
  • Lemon juice

Instructions

  1. Bloom the gelatin by mixing it with icy cold water and letting it sit for 10 minutes.
  2. Puree fresh raspberries and strain through a fine mesh sieve.
  3. Heat a portion of the puree (122-140°F) and dissolve the bloomed gelatin in it.
  4. Stir lemon juice into the mixture and let it cool.
  5. Whip heavy cream until stiff peaks form; chill.
  6. Prepare Italian meringue by whipping egg whites with sugar until fluffy.
  7. Combine hot syrup with meringue while whipping until cool.
  8. Gently fold whipped cream and raspberry mixture into the meringue.
