Ingredients
- 2 cups raspberries (fresh or frozen)
- 2 1/4 cups all-purpose flour
- 1/2 cup granulated sugar (for crust)
- 1 1/2 cups granulated sugar (for filling)
- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- 1 cup unsalted butter (melted)
- 6 large eggs
- 3/4 cup lemon juice (freshly squeezed)
- 1/3 cup cornstarch (for filling)
Instructions
- Prepare raspberry puree by cooking raspberries in a saucepan over medium heat until thickened, about 10 minutes. Strain to remove seeds.
- Preheat oven to 350°F (175°C).
- For the crust, mix flour, sugar, cornstarch, and salt in a bowl. Stir in melted butter until crumbly and press into a greased 9×13 inch baking pan.
- Bake crust for about 15 minutes until lightly golden.
- While crust bakes, whisk together filling ingredients: sugar, cornstarch, eggs, lemon juice, and raspberry puree until smooth.
- Pour filling over warm crust and return to oven for another 25-30 minutes until set.
- Allow cooling completely before slicing.
