Ingredients
- 1 cup dry quinoa
- 1 can (15 oz.) chickpeas, drained and rinsed
- 1 ½ cups cucumber, sliced
- 1 bell pepper, diced
- 1 cup grape tomatoes, halved
- ¾ cup carrots, diced
- ½ cup scallions, sliced
- Juice of 2–3 lemons
- Salt and pepper to taste
Instructions
- Rinse quinoa under cool running water using a fine mesh sieve to remove bitterness.
- In a pot, combine rinsed quinoa, water, and garlic powder. Bring to boil, cover, reduce heat to low, and simmer for about 15 minutes. Remove from heat and let sit for another 10 minutes before fluffing with a fork.
- While quinoa cooks, chop vegetables into bite-sized pieces.
- In a large mixing bowl, combine fluffed quinoa with chickpeas, vegetables, lemon juice, salt, and pepper. Mix well.
- Serve warm or chilled; garnish with extra lemon juice or avocado slices if desired.
