Instructions
- Preheat the oven to 350°F (176°C) and line a cupcake pan with liners.
- In one bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In another bowl, cream together unsalted butter, vegetable oil, sugar, and vanilla until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Gradually incorporate the dry ingredients alternately with milk and lemon juice until just combined.
- Spoon the batter into cupcake liners, filling them 3/4 full.
- Bake for 15–18 minutes or until a toothpick comes out clean.
- Cool completely before frosting with your creamy lemon buttercream.
