  • 1 ¼ cups all-purpose flour
  • 1 ¼ cups old-fashioned rolled oats
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • ¾ cup unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 can (14 oz) sweetened condensed milk
  • 2 tablespoons finely grated lemon zest
  • ½ cup fresh lemon juice
  • 2 large egg yolks

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan with baking spray.
  2. In a large bowl, mix together flour, oats, salt, and baking soda. Add granulated sugar and brown sugar, then incorporate melted butter and vanilla until combined.
  3. Press half of the mixture into the bottom of the prepared pan and bake for about 15 minutes.
  4. For the filling, whisk together condensed milk, lemon zest, lemon juice, and egg yolks in another bowl until smooth.
  5. Pour the filling over the baked crust and sprinkle remaining crumble on top.
  6. Bake for an additional 20–22 minutes until lightly golden.
  7. Allow to cool completely at room temperature before refrigerating until firm.
