  • 1 1/2 lb chicken breast (patted dry)
  • 1 Tbsp olive oil
  • 2 large eggs
  • 1 garlic clove (minced)
  • 1/2 tsp Italian seasoning
  • 1 cup Parmesan cheese (grated)
  • 8 Tbsp unsalted butter
  • 1/4 cup lemon juice
  • 1/4 cup chicken broth
  • 1/4 tsp ground black pepper

Instructions

  1. Cut chicken breasts in half lengthwise and pound to even thickness.
  2. Whisk eggs, minced garlic, Italian seasoning, salt, and pepper in one bowl. In another bowl, combine Parmesan cheese and flour.
  3. Dip chicken into the egg mixture and then dredge in the Parmesan mix.
  4. Heat olive oil in a non-stick skillet over medium heat and cook chicken for about 4-5 minutes per side until golden brown and cooked through (165°F).
  5. In a separate saucepan, melt butter with minced garlic; add chicken broth, lemon juice, and pepper. Simmer for 2 minutes.
  6. Pour sauce over the cooked chicken and garnish if desired.
