  • 2 cups diced carrots
  • 1 cup finely chopped onion
  • ½ cup finely chopped celery
  • 1 tablespoon minced garlic
  • ½ teaspoon black pepper
  • ½ teaspoon dried parsley
  • ¼ teaspoon dried thyme
  • ¼ teaspoon salt
  • 2 bay leaves
  • 1 ½ pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • ½ cup fresh squeezed lemon juice

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté carrots, onion, celery, and garlic until softened (about 5 minutes).
  2. Stir in black pepper, parsley, thyme, salt, and bay leaves. Add chicken breasts.
  3. Pour in the chicken broth and bring to a boil. If using an Instant Pot, seal it and cook on high pressure for 15 minutes.
  4. Once cooked, shred the chicken into bite-sized pieces and return it to the pot.
  5. Stir in orzo pasta and cook until tender (about 10 minutes).
  6. Finish with fresh lemon juice before serving.
