  • 2 large eggs
  • 2 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 1 tbsp lemon juice (for glaze)
  • 1 tsp lemon zest (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, beat softened butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in lemon juice, zest, and vanilla extract.
  4. Gently mix in flour and salt until just combined; avoid overmixing.
  5. Pour batter into the prepared pan and smooth the top.
  6. Bake for 22–25 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool completely before glazing. For the glaze, mix powdered sugar with lemon juice and zest until smooth, then spread over cooled brownies.
