  • ½ cup milk
  • 3 Tablespoons lemon juice
  • 1 ½ cups blueberries – fresh (if using frozen do not thaw)
  • 34 teaspoons of flour – to toss the blueberries
  • 16 oz. cream cheese – room temperature
  • ½ cup granulated sugar
  • 2 Tablespoons all-purpose flour
  • 1 ½ teaspoons vanilla
  • 2 eggs + 1 egg yolk – room temperature
  • ¼ cup sour cream
  • ¼ cup heavy cream
  • 12 oz. full-fat brick style cream cheese – softened
  • 1 cup unsalted butter – softened
  • ¼ teaspoon salt
  • 3 ½4 ½ cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1 Tablespoon lemon zest
  • Lemon wedges
  • Fresh blueberries

Instructions

  1. Preheat your oven and prepare two 9-inch round cake pans by greasing them and lining with parchment paper.
  2. Make the lemon cake batter by combining dry ingredients, creaming butter and sugar, adding eggs, then mixing in milk and blueberries.
  3. Bake the cake layers until golden brown, then cool before removing from pans.
  4. Prepare the blueberry cheesecake layer by mixing cream cheese, sugar, eggs, sour cream, and heavy cream, then bake until set.
  5. Create the lemon cream cheese frosting by beating softened cream cheese with butter and powdered sugar.
