- 2 cups leftover turkey (white or dark meat)
- 1/2 cup fresh squeezed orange juice
- 6 flour tortillas
- 1 white onion (sliced)
- 1.5 teaspoons paprika
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 2 teaspoons light brown sugar (divided)
- 3 tablespoons olive oil (divided)
- 2 tablespoons finely diced red onion
- 2 tablespoons fresh cilantro (chopped)
- 2 tablespoons cotija cheese
Instructions
- In a small bowl, mix paprika, cumin, garlic powder, and brown sugar.
- Shred turkey and combine with orange juice and spice mixture in a mixing bowl.
- Heat olive oil in a large pot over medium-low heat; add turkey mixture and sliced onion. Cover and simmer for 30 minutes.
- In a cast iron skillet over medium-high heat, add remaining olive oil and turkey mixture. Cook until crispy (12-15 minutes), stirring occasionally.
