Ingredients
- 1 tbsp Olive oil
- 1 small Yellow onion (diced)
- 4 cloves Garlic (minced)
- 4 cups Chicken broth, reduced sodium
- 1/2 cup Heavy cream
- 1 4-oz can Green chiles (diced; drained)
- 1 tsp Cumin
- 1 tsp Dried oregano
- 1/4 tsp Cayenne pepper (optional)
- 1/2 tsp Sea salt (to taste)
- 1/2 tsp Black pepper (to taste)
- 8 oz Cream cheese (at room temperature, cut into small pieces)
- 1 cup Mexican blend cheese (shredded)
- 4 cups Shredded chicken
Instructions
- In a Dutch oven over medium heat, sauté diced onion in olive oil for 5–7 minutes until softened. Add minced garlic and cook for another 1–2 minutes.
- Stir in chicken broth, heavy cream, green chiles, cumin, oregano, cayenne pepper (if using), sea salt, and black pepper. Bring to a boil, then reduce heat and let simmer for 40 minutes.
- Lower heat to low and mix in cream cheese and shredded Mexican blend cheese until melted and smooth.
- Add shredded chicken and simmer for an additional 5 minutes until thickened to your preference.
