Ingredients

  • 6 cups chopped kale
  • 1 teaspoon olive oil
  • 1 cup cooked quinoa
  • 1 cup canned chickpeas
  • 1/3 cup diced red onion
  • 1/3 cup diced cucumber
  • 1/3 cup pepitas
  • 1/3 cup golden raisins
  • 1/3 cup crumbled feta cheese
  • 1/8 cup fresh chopped dill
  • 1/8 cup fresh chopped parsley

Instructions

  1. Rinse kale under cold water and dry using a salad spinner or towel. Chop finely and place in a mixing bowl.
  2. Drizzle kale with olive oil, sprinkle with salt, and massage for 1-2 minutes. Let sit for 10 minutes.
  3. Add cooled quinoa, drained chickpeas, diced onion, cucumber, pepitas, raisins, feta cheese, dill, and parsley to the kale.
  4. Prepare the lemon dressing (or use store-bought), pour over the salad mix, and toss until combined.
  5. Serve immediately or chill before serving for enhanced flavor.
