Ingredients

  • 45 cups finely chopped kale
  • 1 1/2 cups shredded green cabbage
  • 1/2 cup whole almonds
  • 3 tablespoons olive oil (divided)
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • 2 teaspoons Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F.
  2. In a small bowl, whisk together olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper.
  3. In a large mixing bowl, toss the chopped kale and shredded cabbage until well combined.
  4. In another bowl, mix whole almonds with 1 teaspoon olive oil and sea salt. Spread on a baking sheet and roast for 6-8 minutes until golden brown.
  5. Once cooled, chop the toasted almonds into smaller pieces.
  6. Toss the greens with the dressing to your liking, then top with the chopped almonds before serving.
