  • 1 large egg
  • 1/2 cup seasoned panko breadcrumbs
  • 4 cloves garlic, minced
  • 2 tablespoons jerk seasoning
  • 1 (14 oz) can full-fat coconut milk
  • Jamaican curry powder

Instructions

  1. In a large bowl, combine ground pork, egg, breadcrumbs, garlic, jerk seasoning, and salt/pepper. Mix gently until combined.
  2. Use a medium spring-loaded scooper to form 20–22 meatballs. Roll them smooth and place on a plate.
  3. Heat butter and olive oil in a non-stick skillet over medium heat. Brown meatballs in batches for about 3 minutes each side; set aside.
  4. In the same skillet, sauté shallots and garlic until fragrant. Add bell peppers and cook until softened.
  5. Stir in curry powder; pour in coconut milk and bring to a boil. Reduce heat and add meatballs back to the sauce.
  6. Cover and simmer for 20–25 minutes or until the internal temperature reaches 160°F.
