Ingredients
- 1 1/2 lbs ground pork
- 1 large egg
- 1/2 cup seasoned panko breadcrumbs
- 4 cloves garlic, minced
- 2 tablespoons jerk seasoning
- 1 (14 oz) can full-fat coconut milk
- Jamaican curry powder
Instructions
- In a large bowl, combine ground pork, egg, breadcrumbs, garlic, jerk seasoning, and salt/pepper. Mix gently until combined.
- Use a medium spring-loaded scooper to form 20–22 meatballs. Roll them smooth and place on a plate.
- Heat butter and olive oil in a non-stick skillet over medium heat. Brown meatballs in batches for about 3 minutes each side; set aside.
- In the same skillet, sauté shallots and garlic until fragrant. Add bell peppers and cook until softened.
- Stir in curry powder; pour in coconut milk and bring to a boil. Reduce heat and add meatballs back to the sauce.
- Cover and simmer for 20–25 minutes or until the internal temperature reaches 160°F.
