- 1/2 lb ground beef (85% lean)
- 1/2 lb ground pork
- 1/2 cup fresh breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 large egg, lightly beaten
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 cup diced yellow onion
- 1 cup diced carrots
- 1 cup diced celery
- 2 cloves garlic, minced
- 6 cups chicken broth
- 2 cups beef broth
- 1 tsp Italian seasoning
- 1 bay leaf
- 1/2 cup acini di pepe or orzo pasta
- 4 cups baby spinach, roughly chopped
- Salt and pepper to taste
- Grated Parmesan for serving
Instructions
- In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper. Mix gently and shape into small meatballs.
- Heat olive oil in a large pot over medium-high heat. Brown the meatballs for about 5 minutes per batch; set aside.
- Sauté diced onion, carrots, and celery until softened. Add minced garlic and cook for an additional minute.
- Pour in chicken and beef broths along with Italian seasoning and bay leaf; bring to a boil. Reduce heat and add meatballs back into the pot. Simmer for 10 minutes.
- Stir in pasta and cook until al dente (about 6–8 minutes). Add chopped spinach until wilted. Season with salt and pepper before serving.
