  • 1/2 lb ground pork
  • 1/2 cup fresh breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup diced yellow onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups beef broth
  • 1 tsp Italian seasoning
  • 1 bay leaf
  • 1/2 cup acini di pepe or orzo pasta
  • 4 cups baby spinach, roughly chopped
  • Salt and pepper to taste
  • Grated Parmesan for serving

Instructions

  1. In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper. Mix gently and shape into small meatballs.
  2. Heat olive oil in a large pot over medium-high heat. Brown the meatballs for about 5 minutes per batch; set aside.
  3. Sauté diced onion, carrots, and celery until softened. Add minced garlic and cook for an additional minute.
  4. Pour in chicken and beef broths along with Italian seasoning and bay leaf; bring to a boil. Reduce heat and add meatballs back into the pot. Simmer for 10 minutes.
  5. Stir in pasta and cook until al dente (about 6–8 minutes). Add chopped spinach until wilted. Season with salt and pepper before serving.
