Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, parsley, garlic, egg, salt, and pepper until just combined. Shape into meatballs about 1 inch in diameter.
  2. Heat olive oil in a large pot over medium heat. Brown the meatballs on all sides for about 5 minutes; remove and set aside.
  3. In the same pot, sauté onion, carrots, and celery for about 5-7 minutes until softened. Add minced garlic and cook for an additional minute.
  4. Pour in crushed tomatoes and broth; stir in basil, oregano, and red pepper flakes if desired. Bring to a simmer.
  5. Return meatballs to the pot and simmer for 15-20 minutes until cooked through.
  6. Stir in spinach (or kale) and pasta; cook until pasta is al dente—about 8-10 minutes. Adjust seasoning as needed.
